Students across Arlington ISD lined up for something new this week – street tacos! 

The districtwide rollout brings a fresh, flavorful option to every school cafeteria, thanks to a new partnership with Chef Juan Flores, owner of Taqueria Saltillo.

To celebrate the launch, Sam Houston High School hosted a special kickoff this week celebrating Taco Tuesday and Hispanic Heritage Month! Superintendent Dr. Matt Smith and Arlington trustees Brooklyn Richardson and Justin Chapa served the tacos in the lunch line alongside the tacos’ creator, Chef Flores – a Sam Houston alumnus and now an Arlington ISD parent.

“When everybody is about to graduate, everybody has a dream,” Flores said. “I am so happy to be here walking in the halls of Sam 20 years later. I have had my business for 15 years, and now to accomplish my dream that I had when I was in school, I have no words.” 

Now available at every campus, the yummy chicken al pastor tacos and Saltillo’s salsa are quickly becoming a student favorite, blending bold flavor with a strong sense of community.

“I like the seasoning,” said sophomore Amiyah Mukes, after her first bite. “They taste tangy, lemony, and peppery.” 

But for students, it’s about more than just taste.

“The tacos are such a good addition to the menu,” Mukes said. “It’s so nice to come to school and have different options every day.” 

The tacos reflect the district’s commitment to meals that celebrate diverse tastes while building meaningful connections with the community. By partnering with a local restaurant led by one of its own graduates, Arlington ISD shows students that hometown pride can be served up in many ways – even in the lunch line. 

“I am emotional and happy at the same time,” Flores said. “The kids have said the tacos are really good and that makes me so happy to hear!”
