BBQ team has one last practice

Spoiler alert! We’re giving weekly updates on the sizzling reality TV series “BBQ High,” featuring Arlington ISD’s competitive BBQ team.      

With just one week left until the High School BBQ state championship, a rainy day couldn’t stop the Arlington ISD Dan Dipert Career + Technical Center’s Smokin’ Ferrets from soaking up one final practice in episode five of Magnolia Network’s TV series “BBQ High.” 

“My goal for this practice is getting our team ready for anything,” said Smokin’ Ferrets coach Greg Almendarez. “We don’t know what state’s going to bring. The team needs to know how to work together in all kinds of conditions.” 

After battling severe weather on state competition day in the past, Martin High School senior Marc Fadel was aware of the potential challenges ahead.  

“Coincidentally, state is notorious for having very bad weather,” he said. “Last year it was windy, the tents were blowing away, and the year before that it was pouring rain.”

Despite the unpredictability, Fadel will be ready for his team to adapt. 

“The weather affects the barbeque a lot,” he said. “More humidity is going to cool down the smoker because it’s making it wet. If it’s cold outside, then you have to use more fuel in your fire.” 

After taking third in the ribs category at the Southlake regional, Fadel was determined to perfect his ribs for state. With his online catering business Habibi Barbeque on the rise, state will be the perfect opportunity to show off his expertise. 

“If I do good, I can tell people, ‘Hey, I had best ribs in state,’” he said. “Now people are going to want my food. It pushes my name out there to the point where everybody is hearing about it, and everybody is going to want it.” 

As his last practice with the Smokin’ Ferrets came to an end, Fadel reflected on his time with his team. 

“You look at this team, we’re like working gears,” Fadel said. “We’re working together and it’s really nice to have people that you’re friends with, that’s the best part. It’s so much fun chilling at the fire with Nate, Brysen and Damion. It’s my last time.” 

But it’s not over yet, and the season finale is almost here!
